Semolina (Rava) Kesari is a kind of common dessert which are served by the many hotels in Jaffna. A yellow color rectangular sweet has a unique taste. This is a free offering dessert with every rice parcel. Nut many hotels use some essence to make a low-quality product, but the original recipe is so delicious. Anyhow, here I am writing another food article of the great sweet dessert of Jaffna. It is time to have some Kesari.
Ingredients

cup of Semolina
4
tbsp of ghee
10
cashews
2
tbsp of raisins
2
cup of water
1
½ cups of sugar
4
tbsp of saffron water
½
tbsp of cardamom powder
How
to
Heat
a pan well and put the ghee into the heated pan. Put the cashew and raising in
to the pan and roast them for a while. The time when the cashew gets golden
brown keep the cashew aside. Now put the semolina into the same ghee pan and
roast on a low temperature for five minutes and keep it aside too. Take a deep
pan and boil the 2 cups of water. Once the water boil well decreases the temperature
to a low point and add the semolina into the pan. Stir well till the semolina
absorbs water well. Then pour the sugar into the pan. Stir well till the sugar
dissolves while keeping a low temperature. Then add the saffron water to make
it colourful. Stir continuously till the mixture shows zero lumps. Then cover
the pan and let it cook for few minutes. Add the roasted cashew and other
ingredients to make it tastier. Finally separate the delicious dessert from the
pan and it is now ready to save. If you need some extra taste add some extra
ghee.
